Here's an easy and healthy alternative to a standard pizza guaranteed to give you a thin and crispy base!
Ingredients:
- Phyllo Pastry
- Mozzarella (or any preferred cheese)
- Italian Parmesan Cheese or Grated Parmesan Style Cheese
- Anchovies
- Garlic & Chilli Relish (optional)
- Grilled Artichokes
- Calamata Style Pitted Olives
- Extra Virgin Olive Oil
Method:
- Remember to take out you phyllo pastry to defrost, an hour before cooking (even better is overnight in your fridge... but who has time to plan, right?!)
- Preheat your oven to 180°C (350°F)
- Lightly butter an ovenproof tray
- Place 4 sheets of phyllo pastry onto the buttered ovenproof tray
- Sprinkle a (very) little olive oil in between each layer
- Now time to build your pizza toppings
- Add a little relish, mozzarella, anchovies, top with some parmesan, salt & pepper
- Now put it into the oven until the cheese is golden brown (be careful because phyllo burns quickly) - usually 5 - 8 minutes
- If your phyllo edges burn, don't stress... just crack the burnt bits off and discard
- Cut into sizeable squares and share with your best mates as a starter or to your family for a quick and healthy meal
TIP:
Add a few extra ingredients and make whatever style pizza that works for you and your family!
